Apple Clafouti

Mix in one bowl
3 eggs + 1 egg yolk
1 cup milk

In Second bowl mix
1 cup flour
1/3 + 2 tblsp superfine sugar
¼ tsp cinnamon

Whisk in half of liquid into the dry stuff in the second bowl…when well combined add remaining liquid.

Put in the fridge

Dice 2 cups or so apples

Brown butter in a pan and drop in apples

Drop in two vanilla beans…some salt -couple grinds of black pepper and finally some sugar.

Hit it with some grappa (or brandy or wine)

Cook about 2 minutes remove from heat and take out vanilla beans.

Spoon into pre-warmed crème brulee dishes

Top with batter.

Bake at 400 degrees until the edges are brown and puffy, top with crème fraiche

One of my favorite and most forgotten not so sweet desserts. Great with fresh or dried cherries.
