Honey-Baked Chicken Drumettes

- Makes 100 servings -

4-1/2 lbs. honey
48 oz. soy sauce
12 oz. orange juice or pineapple juice
6 Tablespoons onion powder
2 Tablespoons ginger, ground
1 Tablespoon cayenne pepper
400 pieces chicken drumettes

Blend together all ingredients except chicken. Place chicken in bowls or pans; pour honey mixture over chicken, turning to coat. Cover and refrigerate at least 2 hours; drain. Spray or line baking trays. Arrange chicken on trays. Bake at 350°F 20 minutes. Turn chicken over. Bake additional 15 to 20 minutes.
